I always assumed they'd be that same grey as on surface ships, but thinking about it, yea, black makes a lot more sense since the sub's mission in so many cases is to hide.

Modern subs are black because they are coated with a variety of paints that help prevent rust and corrosion and absorb a limited degree of thermal and acoustic signatures while underwater.
